Lemon Biscuits
Ingredients
- 310g plain flour
- 1 tsp corn flour
- 1 tsp baking soda
- 1/2 tsp salt
- 170g unsalted butter
- 220g sugar
- 1 egg
- 2 lemons
- 1 tsp vanilla
- 1 cup icing sugar
Method
- Whisk flour, corn flour, baking soda and salt. Set aside.
- Cream buter and sugar.
- To butter add egg, lemon juice, lemon zest and vanilla and mix.
- Add dry ingredients and mix.

Regrigerate for at least 3 hours.
This step is 100% required.
- Preheat oven to 180C.
- Split dough into 25g balls.
- Heavily and completely coat each ball in icing sugar.
- Bake the cookies for 12–13 minutes or until the edges appear set.
- Remove from oven, cool for 5 minutes then trasnfer to a cooling rack.
