Lemon Biscuits

Yellow lemon biscuits with white icing sugar in a crinkle pattern
Makes 30

Ingredients

  • 310g plain flour
  • 1 tsp corn flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 170g unsalted butter
  • 220g sugar
  • 1 egg
  • 2 lemons
  • 1 tsp vanilla
  • 1 cup icing sugar

Method

  1. Whisk flour, corn flour, baking soda and salt. Set aside.
  2. Cream buter and sugar.
  3. To butter add egg, lemon juice, lemon zest and vanilla and mix.
  4. Add dry ingredients and mix.
  5. Regrigerate for at least 3 hours.

    This step is 100% required.

  6. Preheat oven to 180C.
  7. Split dough into 25g balls.
  8. Heavily and completely coat each ball in icing sugar.
  9. Bake the cookies for 12–13 minutes or until the edges appear set.
  10. Remove from oven, cool for 5 minutes then trasnfer to a cooling rack.
