Pão de Queijo

Brazilian cheese rolls
Makes about 10 in a regular muffin tin

Ingredients

  • 175ml milk
  • 90ml canola oil
  • 180g tapioca flour
  • 3/4 tsp salt
  • 75g egg (1 1/2 large eggs)
  • 40g cheddar, freshly grated
  • 40g parmesan, freshly grated
  • Optional: extra parmesan, rosemary, garlic powder

Method

  1. Preheat oven to 200°C and grease a muffin tin

Spray about 10 wells of a regular muffin tin (or a mini muffin tin) with oil, or rub with butter. Make sure the whole surface and sides of each well are coated or they will stick.

  2. Blend egg, milk, oil, tapioca flour and salt until smooth

Tapioca flour is sometimes labelled tapioca starch. Don't substitute it with anything else.

  3. Add cheeses and pulse a couple of times
  4. Immediately pour into the muffin tin, 3/4 full

If the batter sits before filling the tin, the ingredients settle and the rolls come out uneven. Sprinkle a little extra parmesan on top if you like.

  5. Bake for 15-20 minutes until puffed and golden
  6. Cool for a few minutes before removing from the pan

    Best served warm.
